Most people I know use wikis for group projects where each student within a group contributes to research and the group collate the pieces into one file for submission. Each group has a different topic.

Another use is for students to share their approaches in teaching a particular field of study and commenting on each others contributions (comparing and contrasting?) and sharing teaching resources. Students need some guidance on how to comment. At present their instructions are a bit vague "comment on each others contributions".
